Guest Recipe: Lavender Shortbread Rounds

Lavender Shortbread Rounds

Makes 10

110g plain flour
50g caster sugar
100g unsalted butter
2tbsp dried culinary lavender
1 tsp lemon juice
Butter for greasing
Brown sugar for sprinkling

Preheat the oven to 200°C (fan assisted). Mix the flour and sugar together before rubbing in the butter with your fingers. Knead the ingredients together with your hands until the butter is combined and the mix has come together.

Add the culinary lavender and lemon juice, and stir together until everything is mixed well.

To shape the best shortbread ’rounds’, take a palm sized ball of the mixture and roll in the palm of your hand, before pressing flat onto a pre-lined and greased baking tray. Do this with the remainder of your shortbread mix, and then sprinkle the flat discs with the brown sugar. Pop in the oven for 20 minutes, or until the edges of the biscuits start turning golden.

Wait until the shortbreads have cooled, then serve with a cuppa!
