Guest Recipe: Madeleine Shaw’s Vegetable Bowl

Over-indulged during the festive season? Us too, but we’re getting back on track with healthy and delicious breakfasts and lunches inspired by some of our favourite foodies. We’re excited to share this exclusive recipe for a flavourful veggie bowl, brought to you by nutritional health coach, expert yogi and all-round glow-getter Madeleine Shaw.

Says Madeleine: “being stuck for time at work doesn’t mean lunches have to be boring. All you need to do is prep some delicious dishes to take with you while you’re on-the-go. This Spiced Chickpea and Chargrilled Vegetable Bowl is so great to make a batch of on a Sunday night to take into work for lunch. It’s a delicious veggie dish, but is still packed with lots of protein thanks to the chickpeas. The blend of spices is so delicious and the chilli flakes give it that extra kick. It’s the perfect lunchbox dish, with gorgeous flavours and ultimate satisfaction come lunch time!”

Madeleine Shaw’s Spiced Chickpea and Chargrilled Vegetable Bowl

2 tbsp olive oil
1 tsp smoked paprika
1 tsp cumin
1 tsp dried chilli flakes
1 x 400g can chickpeas, drained
1 tsp sesame seeds
1 red pepper, cut into thick strips
1 small courgette, cut into 1cm slices
50g watercress
4 radishes, thinly sliced
2 tbsp hummus

Heat the oil in a frying pan and add the spices. Once the oil is hot, add the chickpeas and sesame seeds. Cook over a medium heat until they start to brown and go a bit crispy.

Whilst the chickpeas are cooking, heat a griddle pan over a high heat and brush the pepper and courgette with a little oil. Add them to the pan and cook until the vegetables are tender and have visible char lines.

To assemble, arrange half of the watercress across the base of your bowl or lunchbox (I used the larger of these lunchboxes from Cath Kidston’s Health and Happiness collection). Top with half of the spiced chickpeas and chargrilled vegetables. Sprinkle over half of the radish slices and finish with a tablespoon of hummus and a scattering of extra sesame seeds. Save the leftovers for tomorrow’s lunch!
